
Seitan Steaks
Ingredients
1 c cooked lentils
6 T water
2 T nutritional yeast
2-3 T tomato paste
2 T soy sauce
1 t garlic powder
1 t onion powder
1 t chili powder
½ t liquid smoke
¼ t black pepper
Marinade:
¼ c water
2 T soy sauce
1 T maple syrup
Directions
To make the vegan seitan steaks:
Add the steak ingredients to a food processor and pulse, scraping down the sides.
Place the mixture on a clean surface and knead. If it is a bit crumbly, continue kneading it until it forms a tight ball. Do not over-knead. Cut the ball into 4 sections, use a rolling pin to roll out each section into ½" thick steaks. The dough will be very tough and stretchy, work it until you get your desired steak shapes.
Fill a large pot with several inches of water and place a steamer basket inside. Bring the water to a boil, then add the steaks to the steamer basket, overlapping them if needed. Cover. Steam for 25 minutes, flipping the steaks halfway through. The steaks will double in size as they cook.
In a large air-tight container, combine the marinade ingredients. Remove the steaks from the steamer and coat with the marinade. Let soak for 30 minutes or more before cooking.
